Good day,
What version of ScreenConnect are you using? If you're connecting to a Mac guest via a Mac host, cmd+c and cmd+v should work as expected.
If you're connecting to a Mac guest from a Windows host, you will need to use the following keyboard shortcuts on the Windows host to execute the following commands on the Mac guest (in general, substitute the Windows key for the command key):
copy: Win+c
paste: Win+v
cut: Win+x
empty trash: shift+Win+backspace
create new folder: shift+Win+n

Ben
